Lucas´s Butter Chicken
Ingredients:
2 large chicken breasts chopped in small pieces
2 tbl freshly ground garlic
2 tbl freshly ground ginger
1 greek yogurt (125gr)
2 tsp oregano
2 tsp cumin
2 tbl freshly grated turmeric
1 can coconut milk (400 ml)
2 tbl garam malasa spice blend
1 small can whole tomatoes (400gr/240g net weight)
1 tnl tomato paste
½ cp raw cashews
3 tbl unsalted butter
Salt and pepper to taste
½ chopped onion
1 bay leaf
To make:
Mix together 1 tbl of ground garlic, ginger, garam masala, yogurt, 1 tsp oregano, 1 tsp cumin, 1 tbl turmeric. Add chicken and let marinate overnight in refridgerator.
Sear chicken in 1 butter in wok. Set aside.
Chop and sauté the onion in 1 tbl butter. Add tomato paste, whole tomatoes with juice, and the other half of the spices from marinade.
Add cashews and salt and pepper to taste.
Add the coconut milk. Add bay leaf. Add tbl of butter.
Blend marinade together. Add chicken and let simmer.
Serve with white or wild rice.
