Banana Pecan Oat Muffins
Ingredients:
125 gr pecans, crushed
125 gr oats
125 gr all-purpose flour, sifted
250 gr sugar
125 gr salted butter, at room temperature
4 ripe bananas
1 tsp vanilla
1 tsp baking soda
2 tsp baking powder 1 1/2 tsp cinnamon
1 tsp ground nutmeg
3 eggs
Topping (optional)
60 gr crushed pecans
3 tbl butter
3 tbl oats
3 tbl sugar
1 tbl flour
1/2 tsp cinnamon
1/2 tsp ground nutmeg
To make:
1. Sift together flour, cinnamon, nutmeg, baking powder and baking soda in a bowl. Add the oats and mix together.
2.In a blender, blend together sugar, butter, bananas and vanilla until smooth.
3.Fold the banana mixture into the flour. Use an icecream scooper to add batter to cupcake cups. Top with topping (see instructions below).
4.Bake a 170ºC until golden brown or the cake tester comes out clean.
For Topping:
Mix all ingredients together and pinch together with fingers to form crumbs. Sprinkle on muffins before baking.
