Chicken Nuggets
Ingredients:
1 tbsp potato flakes
1 egg(optional)
2 chicken breasts
½ chicken bouillon cube
¼ tsp.salt and pepper to taste
2-3 tbsp water
Breadcrumb Cornflake Crust:
1 egg
1 cup Bread crumbs and ground corn flakes
Warm the water with the bouillon cube. In a blender or thermomix, blend the chicken, chicken broth, potato flakes. salt and pepper.
Form balls with the chicken mixture and and dip in egg then coat with breadcrumbs and cornflakes. Flatten the balls on a cookie sheet.
You can either fry them or bake them. If you bake them in the oven, spray them with olive oil on both sides. and flip after 8-10 minutes and cook on the other side.
