Roasted Beet Hummus



Ingredients:
2 cups roasted beets
1/2 cooked chick peas
1 tbl tahini paste
1 tsp ground cumin
1-2 tbl of EVOO
1/2 cup vegetable broth (possibly more depending on thickness of hummus)
Juice of one lime.
Salt and pepper to taste.

To make:
1. Peel and beets and roast in oven sprayed with olive oil for about 45 minutes, or until cooked at 350ºF or 170ºC. Remove from oven and let cool.
2. In a blender, blend all ingredients until smooth.
3. Serve with fresh veggies or pita chips
