Spinach for Kids






Spinach, rice and mozzarella cheese

Ingredients:

1 cp white rice
2 bunches of fresh spinach, stems removed, cooked (boiled or steamed)
1 garlic clove
1 cup mozzarella cheese
1/2 parmesian cheese
1 tbl butter
1 tbl EVOO
2 cp broth (homemade, store bought, or juice from cooked spinach)                                                            salt and pepper to taste

Optional: Add sautéed onion to rice and spinach. 
To make:
1. Boil or steam spinach, stems removed, under cooked through.
2. Heat 1 tbl olive oil with garlic clove. Add rice, mix in with oil and add 2 cups water (broth or juice from cooked spinach), and salt.  Once the rice starts to boil, lower to a simmer and cook until fully absorbed.
3. Add spinach to rice and mix gently with fork. Then, add butter, mozzarella cheese and parmesian cheese and continue to gently mix, carefult not  to break the rice. 
4. Serve as a side dish with chicken, steak, pork, etc.
